Cuisine Italian
- 1 head cauliflower cut into bite sized pieces
- 3 Italian sausages removed from casings; can sub ground Italian sausage from meat counter
- 1/3 cup white wine
- 1/4 cup olive oil plus 1 Tbsp olive oil
- 1 onion diced
- 3 cloves garlic minced
- kosher salt and pepper
- 1/2 tsp oregano
- 1 cup Parmesan cheese plus additional for serving
Preheat oven to 350°. Steam the califlower in a stovetop steamer about 5 minutes until almost done but still crisp, lightly sprinkle with salt and set aside.
Slice or break sausage into bite sized pieces. I prefer smallish chunks. Cook Italian sausage in skillet over medium heat for about 5-10 minutes. Add wine and allow to simmer for about 10 minutes. Meanwhile, in another small skillet, saute the onions and garlic in 1 Tbsp olive oil until onions are translucent. Season with a sprinkle of salt and pepper.
Spray a baking pan with cooking spray and place cauliflower in bottom of pan. Add the sausage, onion, and garlic on top. Drizzle with the 1/4 cup of olive oil. Sprinkle with salt, pepper, oregano, and a generous amount of cheese. Reserve just a bit to sprinkle on top before serving.
Cover and bake for 30 minutes. Uncover and stir; testing to see if tender. Bake a little longer if necessary. Cauliflower should be tender.
Before serving, stir again and sprinkle with a bit more Parmesan. Mangia!
