Roasted Cauliflower with Sausage

My Roasted Cauliflower with Sausage gets its spicy salty flavor from homemade Italian sausage. Store bought Italian sausage works too — try to get the best quality sausage from your butcher shop or deli. Steaming the cauliflower a bit beforehand ensures that the dish will come together pretty quickly.

To me, cauliflower may be healthy, but it is pretty bland and tasteless. Trying to find flavorful cauliflower recipes that I truly like is a challenge. Adding Italian sausage, some white wine, good grated cheese and some Italian spices has proven to be just what I was looking for!

Serve this delicious Roasted Cauliflower with Sausage alongside some sliced tomatoes seasoned with garlic salt and pepper, drizzled with olive oil, and broiled in the oven with some parmesan cheese. Also perfect with a salad, such as my Favorite Italian Green Salad with Avocado and some good bread! Enjoy!

Ingredients
  

  • 1 head cauliflower cut into bite sized pieces
  • 3 Italian sausages removed from casings; can sub ground Italian sausage from meat counter
  • 1/3 cup white wine
  • 1/4 cup olive oil plus 1 Tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • kosher salt and pepper
  • 1/2 tsp oregano
  • 1 cup Parmesan cheese plus additional for serving

Instructions
 

  • Preheat oven to 350°. Steam the califlower in a stovetop steamer about 5 minutes until almost done but still crisp, lightly sprinkle with salt and set aside.
  • Slice or break sausage into bite sized pieces. I prefer smallish chunks. Cook Italian sausage in skillet over medium heat for about 5-10 minutes. Add wine and allow to simmer for about 10 minutes. Meanwhile, in another small skillet, saute the onions and garlic in 1 Tbsp olive oil until onions are translucent. Season with a sprinkle of salt and pepper.
  • Spray a baking pan with cooking spray and place cauliflower in bottom of pan. Add the sausage, onion, and garlic on top. Drizzle with the 1/4 cup of olive oil. Sprinkle with salt, pepper, oregano, and a generous amount of cheese. Reserve just a bit to sprinkle on top before serving.

  • Cover and bake for 30 minutes. Uncover and stir; testing to see if tender. Bake a little longer if necessary. Cauliflower should be tender.
  • Before serving, stir again and sprinkle with a bit more Parmesan. Mangia!
