Cheddar, Green Onion & Olive Dip

This easy Cheddar, Green Onion & Olive Dip is a simple, layered dip that I whip up multiple times a year for all kinds of occasions. From tailgates to Christmas parties to summertime appetizer, this dip is super popular every time I serve it! And I have been serving it for 20+ years!

A good friend of mine gave me this recipe years ago when my children were young. To be honest, I didn’t even want to try it when she told me that green olives were in it. But there is something about the way all the flavors meld together as you layer the individual ingredients. Hard to describe, but they simply become perfectly balanced!

When you finely dice up the green olives, they lend a salty, briny flavor to the dip. They are almost undetectable as “olive” in this recipe. That salty, briny flavor blends perfectly with the sweetness of the green onions and the creamy spiciness of the Rotel-blended cream cheese base. Then you top it all off with a layer of freshly grated sharp cheddar cheese. Super good!

Easily made in advance; layer everything on a platter except the shredded cheddar. Cover tightly with plastic wrap. Then, right before you are ready to serve, add the shredded cheddar on top of everything. Also wonderful the day after…if it lasts!!

Ingredients
  

  • 2 8 ounce packages cream cheese softened
  • 1 can Rotel tomatoes undrained
  • 1 bunch green onions
  • 1 6 ounce jar sliced green olives with pimentos
  • 2 cups freshly grated sharp cheddar cheese

Instructions
 

  • In a stand mixer with the paddle attachment, beat the cream cheese until creamy. Add the can of undrained Rotel and beat together until smooth. Spread onto a large platter with a lip and chill in the fridge while you prep the other ingredients.
  • Finely chop the green onions and spread on top of the cream cheese layer.
  • Drain green olives well, and finely dice. sprinkle on top of the green onions.
  • Sprinkle sharp cheddar on top of all. Serve with blue corn tortillas. Enjoy!
