Simple Fresh Mango Salsa
Whether served on top of fish, scooped up on a chip, or eaten as a salad, this Simple Fresh Mango Salsa is a warm weather fave! Colorful and sweet, with a spicy bite, it is a summer staple. And oh so easy to make!
Start with ripe mangos. I usually wait until they are on sale at the grocery and will buy a bunch of them. I dice them up and use some for the salsa and the rest I freeze for smoothies or just munch on them frozen. To dice them, simply hold the unpeeled mango upright and run the knife about a third of the way down the fruit, avoiding the large pit in the middle. Do this on both sides and you will have two mango “boats”. Then take the knife and score the fruit horizontally then vertically. Turn the peeling inside out to expose the fruit. They will be in neat little squares. Run the knife underneath each little mango square and you’ve got diced fruit.

Simple Fresh Mango Salsa
Ingredients
- 2 ripe mangos diced
- 1/2 medium red pepper chopped
- 1 large shallot chopped
- 1 jalapeno pepper seeded and minced
- juice of one large lime
- 1/2 cup fresh cilantro leaves chopped
- 1/8-1/4 teaspoon garlic salt to taste
Instructions
- In a large serving bowl, combine all ingredients except garlic salt. Add 1/8 teaspoon garlic salt, stir well and taste for additional garlic salt or lime, to taste.
- Let sit 10 minutes before serving. If you have a ripe avocado, you can add that as well right before serving – delicious! Enjoy!
