Sauteed Red Peppers with Asiago

A super simple appetizer that pairs sauteed sweet red peppers with a chunk of Asiago cheese. Serve on crackers of choice.

- 1 Tbsp olive oil
- 2 red bell peppers
- 1/4 tsp garlic powder
- 1/4 tsp dried basil
- 1/4 tsp dried parsley
- pinch of crushed red pepper flakes
- kosher salt and black pepper
- 1 wedge Asiago cheese cut in bite sized slices
- round crackers of choice
Slice the red peppers into thin strips then cut these strips in half or thirds to fit on crackers easily.
Heat oil in skillet over medium heat. Add peppers and season with garlic powder, basil, parsley, crushed red pepper and salt and pepper. Saute over medium heat for about 10 minutes. I like to cover the skillet partially to make sure the peppers heat evenly. Garnish with chopped fresh basil or parsley if desired.
When peppers are tender, serve on round crackers of choice on top of a slice of Asiago cheese. Keep warm over low heat. Enjoy!
