Salad with Homemade Greek Dressing

Simple green salad with a delicious and versatile Greek Dressing.

Salad Ingredients
- Iceburg and/or Romaine lettuce torn into bite sized pieces
- 1 tomato seeded and chopped
- ½ to 1 small red onion finely chopped
- Kalamata olives amount to taste, chopped
- ¼ cup feta cheese crumbled
Greek Dressing
- ½ cup olive oil
- ¼ cup vinegar/juice from a jar of pepperoncini peppers
- 1 teaspoon Dijon mustard
- 2 cloves garlic minced; I use the premeasured frozen minced garlic cubes from Trader Joe's
- ¼ teaspoon dried oregano
- ¼-½ teaspoon kosher salt to taste
- ½ teaspoon black pepper
For the salad, place the lettuce, tomato, onion, and olives in a large bowl.
For the dressing, add all dressing ingredients to a mason jar or other jar with a tight fitting lid. Shake vigorously to combine. Drizzle over salad and top with crumbled feta and additional black pepper. Store leftover dressing in the refrigerator for up to a week. Enjoy!
