Salad with Homemade Greek Dressing

Simple green salad with a delicious and versatile Greek Dressing.

Ingredients
  

Salad Ingredients

  • Iceburg and/or Romaine lettuce torn into bite sized pieces
  • 1 tomato seeded and chopped
  • ½ to 1 small red onion finely chopped
  • Kalamata olives amount to taste, chopped
  • ¼ cup feta cheese crumbled

Greek Dressing

  • ½ cup olive oil
  • ¼ cup vinegar/juice from a jar of pepperoncini peppers
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced; I use the premeasured frozen minced garlic cubes from Trader Joe's
  • ¼ teaspoon dried oregano
  • ¼-½ teaspoon kosher salt to taste
  • ½ teaspoon black pepper

Instructions
 

  • For the salad, place the lettuce, tomato, onion, and olives in a large bowl.
  • For the dressing, add all dressing ingredients to a mason jar or other jar with a tight fitting lid. Shake vigorously to combine. Drizzle over salad and top with crumbled feta and additional black pepper. Store leftover dressing in the refrigerator for up to a week. Enjoy!
