Maple Mashed Sweet Potatoes

Creamy and sweet, these sweet potatoes are an excellent side dish! Perfect with pork, chicken or a salad all year round.

- 3-4 sweet potatoes
- 4 Tbsp butter
- 1/4 cup pure maple syrup
- 2 Tbsp mascarpone cheese
- 1 tsp vanilla extract optional
- 1 pinch kosher salt about 1/4 teaspoon
- 1/4 tsp black pepper
I recommend using a crock pot to cook the sweet potatoes. Rinse and scrub 3 large or 4 medium sized sweet potatoes. Set aside on a towel for a few minutes, but do not dry off completely. Spray the bottom of your crock pot with cooking spray. Place the damp sweet potatoes in the crock pot and pierce a couple of times with a fork. Cover and cook on high approximately 4 hours or until tender.
Place butter in the bottom of a stand mixer bowl. Scrape the insides of the warm cooked sweet potatoes into the bowl on top of the butter to melt it. Add the remaining ingredients and, using the paddle attachment, combine to desired consistency. I like mine to be slightly chunky rather than completely smooth.
Place in serving bowl with a dot of butter and an extra drizzle of pure maple syrup. Enjoy!
