This Smoked Almond Chicken Salad is a dressed up version of the classic chicken salad. Such a versatile dish and so easy to whip up! Everyone’s favorite any time of year, especially in the warmer months.

As always, use the best quality ingredients that you can find for the best results. Quality is key, particularly when there are a minimal number of ingredients. You can use chicken breast that has been poached in chicken broth, baked in the oven, smoked from your favorite barbecue joint, or rotisserie from the grocery deli. Combine the chicken with just a few simple ingredients and you’ve got a staple dish that you can serve in a variety of ways. On its own with some sliced fruit a crackers. Atop a salad drizzled with vinaigrette. Stuffed in a mini croissant, french roll or white bread. Or rolled up in a wrap. Always good!

Classic chicken salad taken to the next level with the simple addition of chopped smoked almonds!

Ingredients
  

  • 2 cups chopped cooked chicken breast
  • 1/2 cup mayonnaise
  • 1 teaspoon dijon mustard
  • squeeze of lemon juice
  • 1-2 stalks celery finely chopped
  • 1/2 teaspoon kosher salt start with 1/4 teaspoon; to taste
  • freshly ground black pepper to taste
  • 1/2 cup smoked almonds finely chopped

Instructions
 

  • Place chicken breast in a food processor; pulse lightly to get desired texture. I prefer a smoother consistency that doesn't have large pieces in it. You can also simply shred the chicken breast if desired, with two forks.
  • In a medium sized bowl, combine the mayonnaise, dijon mustard, lemon juice, salt and pepper. Stir in the celery and just a sprinkle of the smoked almonds. Fold the chicken into the mayonnaise mixture and mix well.
  • To serve, sprinkle the remaining smoked almonds on top of the chicken salad and a grind of additional black pepper. Enjoy!
