Easy Slowcooker Sweet Potatoes

If you have never made Easy Slowcooker Sweet Potatoes, let me just say…once you make them this way you will never go back to baking them in the oven. I mention baking sweet potatoes in a crock pot in my Maple Mashed Sweet Potatoes recipe. But they deserve their own seperate recipe attention. It is such a game changer. There is something about the way the crockpot slow cooks the sweet potato that makes it completely foolproof. Truly they come out perfect every time.

So alot of time when cooking sweet potatoes they can turn out mushy, stringy, or unevenly cooked. It is especially annoying when they get overcooked and start oozing sugar all over the pan they are on. They stick to the pan and come out looking awful and tasting burnt.

Well, enter the slowcooker, which somehow prevents all of the above. Every time I cook them in the slowcooker they turn out fluffy, perfectly cooked, and looking like a sweet potato, not flattened, odd looking, or burned. Another benefit is that after they are finished cooking, you can go ahead and season them, leave them on warm with the lid on and they hold up very well. You can get the rest of your meal finished up and then have them waiting to be served.

  • 1 Slow Cooker

Ingredients
  

  • 4 sweet potatoes

Instructions
 

  • Rinse and scrub 3 large or 4 medium sized sweet potatoes. Set aside on a towel for a few minutes, but do not dry off completely.
  • Spray the bottom of your crock pot with cooking spray. Place the damp sweet potatoes in the crock pot and pierce a couple of times with a fork.

  • Cover and cook on high approximately 4 hours or until tender. To serve, season with garlic salt, black pepper and a bit of pure maple syrup. Enjoy!
