Crockpot Ribeye Roast

The most delectable of crockpot roasts, Crockpot Ribeye Roast will be your new slow cooker fave! Over the years I have tried a myriad of crockpot roast recipes and most were pretty good. Every recipe essentially consists of a chunk of beef of some type that cooks low and slow in spices. Dry flavor packets are usually involved, and a bit of liquid as well. The result is tender meat with a brown gravy that you can serve with vegetables, rice, or noodles.

The problem for me is that either the cut of meat is too tough or too fatty for my tastes. I also feel like it can be expensive and wasteful when I need to cut off a bunch of fat before cooking. Or if I have to discard tough or fatty pieces after the meat is cooked. Not good.

One day I was getting my hair done and my stylist, Joshua, who is a fabulous cook, told me about his version of a crockpot roast. He simply uses a super thick cut ribeye instead of a chuck or round roast. You might initially think, as I did, that , wow, a ribeye is much more expensive per pound than say, a chuck roast. It is. But consider this: a ribeye is so flavorful on its own. There is no browning or trimming necessary before cooking. Also, a minimum of two people can easily share one ribeye. Made perfect sense to me.

Just throw a thick cut ribeye into the crockpot on top of veggies and seasonings, no browning or trimming needed. Cook as you would a normal roast in the slowcooker. The flavor and texture of the meat is phenomenal and there is absolutely no waste. When I tried it I was sold. I will never go back to traditional chuck or round roast!

Serve Crockpot Ribeye Roast with the vegetables cooked along side it with a simple green salad such as my Favorite Italian Green Salad with Avocado. Delicious!

Flavorful ribeye slow cooks with veggies in a delicious, slightly spicy brown gravy. Serve with a green salad.

Ingredients
  

  • 1-2 thick cut ribeye steaks 1 steak serves two adults
  • 1-2 pounds small Yukon gold potatoes washed and halved
  • 16 ounces white mushrooms quartered
  • 1/2 package baby carrots, cut in half can substitute 2 carrots, peeled and sliced
  • 1/2 jar pepperoncini peppers, plus 1/2 cup of the juice from the jar
  • 1 package Au Jus gravy (dry seasoning packet)
  • 1 package brown gravy mix (dry seasoning packet)
  • fresh ground black pepper to taste
  • 1 ½ cups water
  • 2 Tablespoons butter

Instructions
 

  • Spray slowcooker with cooking spray and place potatoes, mushrooms and carrots in the bottom. Place ribeye steak on top of veggies.
  • Combine seasoning packets and a good bit of black pepper in a small bowl and stir. Sprinkle this mixture on the ribeye steak and rub into meat. Sprinkle any remaining seasoning mixture onto the veggies.
  • Place the pepperoncini peppers on top of the steak and veggies and pour the water and the 1/2 cup pepperoncini juice from the jar of peppers on top of all. Dot with the butter.
  • Cook on low for 7-8 hours, until tender. Enjoy!
