Creamy Avocado Lime Dip

Creamy Avocado Lime Dip is a deliciously simple appetizer or snack perfect for serving in the warmer months. Bright with lime, creamy with avocado and sour cream, and spicy with the right touch of Mexican seasonings. This dip has some of the same ingredients as guacamole, yet it has a decidedly different taste.

One bowl, dump all the ingredients in and stir — my kind of dip in warm weather (which, in Alabama, that warm weather is about 9 months out of the year). To be honest, one bowl recipes are always calling my name! This recipe is super easy and most of the ingredients are typically in my pantry. As a matter of fact, I created this recipe many years ago when I was having moms over and needed a quick appetizer. I had several avocados and put them in a bowl. Then I literally threw a bunch of ingredients in that I had on hand and tasted and stirred until this Creamy Avocado Lime Dip was born!

Avocados are the main ingredient, and you need several in this dish. So make sure that you buy ripe ones from the market or allow time for them to ripen before making this dip. I usually buy minimum five or six avocados at a time as I use them in recipes a lot. That said, it can be difficult to find perfectly ripe avocados. That doesn’t have to be a problem.

To find the perfect avocado, you can’t really go by the color of the skin. First look for avocados that have the stem on top intact. The avocado may be light green, dark green, or even black, but I look for that small stem first. Then feel the avocado and if it is hard I may still buy them but I know it will be several days before I can use them. If the avocado gives slightly when you press on it you know it is ripe. The next thing to do if the avocado feels ripe is to gently pull the stem out and look underneath. If the flesh looks green or yellow then it is perfect. Put the stem gently back in and buy it. If the flesh underneath looks grey or black then it is overripe. You don’t want it.

When avocados are ripe you can put them in the fridge and they will keep at least a week. So if you buy underripe ones, just feel them after a few days and if they are soft, put them in the fridge. This is how I always have ripe avocados ready for my recipes.

Ingredients
  

  • 3-5 avocados coarsely chopped
  • zest and juice of one lime
  • 1 16 ounce container sour cream I use Daisy Light sour cream
  • 1 can Rotele tomatoes and green chiles undrained
  • 3 Tablespoons salsa or picante sauce I use Pace
  • ½ cup fresh cilantro chopped, plus more for serving
  • 1 Tablespoon garlic salt to taste
  • 1/2 Tablespoon black pepper to taste

Instructions
 

  • Squeeze lime juice on top of coarsely chopped avocados in a medium sized bowl.
    Combine with remaining ingredients and stir well. Taste for desired seasonings.
  • Top with extra cilantro and serve with blue corn tortilla chips or chips of choice. Enjoy!

Notes

When making this dip, it is very easily customized to your personal taste!  For example, you can use more avocados if desired.  I often do, especially if I have a few extra that I need to use before they get too ripe.  You can also adjust the amount of lime.  Or if too lime-y, you can add a bit more sour cream.  
This dip is best served immediately, but will keep pretty well in the fridge for about a day.  To prevent the avocado from turning brown, simply place plastic wrap or wax paper directly touching the top of the dip for an air tight seal.
