Maple Mashed Sweet Potatoes
These Maple Mashed Sweet Potatoes are such a versatile side dish! With just a handful of ingredients, they come together easily and are wonderful with beef, pork, chicken, or even a just a big green salad. The natural sweetness of the potatoes is accentuated with smokey maple syrup instead of sugar. Mascarpone cheese gives creaminess and an additional touch of sweet.
One of the easiest ways to cook the sweet potatoes for this dish is in a crock pot. When you cook your sweet potatoes this way you will never go back to cooking them in the oven! Simple, minimal cleanup, and no heating up your big oven — all pluses in my book. Also, there is something about the way these potatoes “bake” in the crock pot that yields fluffy insides every time.
All of the men in my family adore these Maple Mashed Sweet Potatoes and there are rarely leftovers. They were also a regular menu item that I delivered to my brother Joe when he was sick. Travels well and can be enjoyed all year round! Try them–you won’t be disappointed!
Maple Mashed Sweet Potatoes
Ingredients
- 3-4 sweet potatoes
- 4 Tbsp butter
- 1/4 cup pure maple syrup
- 2 Tbsp mascarpone cheese
- 1 tsp vanilla extract optional
- 1 pinch kosher salt about 1/4 teaspoon
- 1/4 tsp black pepper
Instructions
- I recommend using a crock pot to cook the sweet potatoes. Rinse and scrub 3 large or 4 medium sized sweet potatoes. Set aside on a towel for a few minutes, but do not dry off completely. Spray the bottom of your crock pot with cooking spray. Place the damp sweet potatoes in the crock pot and pierce a couple of times with a fork. Cover and cook on high approximately 4 hours or until tender.
- Place butter in the bottom of a stand mixer bowl. Scrape the insides of the warm cooked sweet potatoes into the bowl on top of the butter to melt it. Add the remaining ingredients and, using the paddle attachment, combine to desired consistency. I like mine to be slightly chunky rather than completely smooth.
- Place in serving bowl with a dot of butter and an extra drizzle of pure maple syrup. Enjoy!
