Dill Pickle Ranch Dip

My family became obsessed with this fabulous Dill Pickle Ranch Dip when I made it for the first time this summer. I was listening to a random podcast – my favorite thing to do when driving – and a lady was talking about a dill pickle dip that she made. To be honest, I immediately thought “yuck”! But as she described how she made it and what was in the recipe, I became intrigued. Now she just loosely talked on the podcast about the ingredients she used and she listed the ingredients in rapid succession. I later tried to recreate it as best I could. So this particular recipe may not be an exact duplication, but – who cares, as it is absolutely delicious!!

I cannot for the life of me remember who it was that talked about this dip or even the podcast they were on. But my interpretation of this recipe will surely not be forgotten in our household! This dip is great as a snack or as an appetizer with some Wavy Lay’s potato chips. Note that Ruffles, Wavy Lay’s or any other substantial potato chips are recommended as this is a thick dip!

Enjoy this Dill Pickle Ranch Dip any time; excellent at a tailgate or party or weekend snack. Or, try it as we ate it all summer long–with the Wavy Lay’s–as a side dish with cheeseburger sliders. So good!

Dill Pickle Ranch Dip

Creamy, savory and dill-y! Serve with some Wavy Lay's Potato Chips. You need a substantial chip to scoop this deliciously thick dip!

Ingredients
  

  • 1 Tablespoon butter
  • ¾ cup panko bread crumbs
  • 2 cups sour cream I use Daisy Light Sour Cream
  • 1-2 cups dill pickles, minced (about 6 baby dills)
  • 1 package Hidden Valley Ranch dressing mix
  • ½ teaspoon dried dill plus more for serving

Instructions
 

  • In a small saucepan, melt the butter over medium low heat and add the panko crumbs. Toast lightly and set aside.
  • Combine the sour cream, minced pickles, ranch dressing mix and dried dill in a medium bowl. Stir well.
    Now add most of the toasted bread crumbs, reserving just a little bit for serving.
    Stir well to combine and add just a little pickle juice if desired to thin just a bit.
  • Allow to sit in the refrigerator for about 30 minutes for flavors to blend. Then when ready to serve, place in bowl and sprinkle with reserved bread crumbs and some dried dill. Serve with Wavy Lay's or Ruffles Potato Chips. Enjoy!
