Salad with Homemade Greek Dressing

This Salad with Homemade Greek Dressing is just a simple green salad that really showcases a homemade dressing that is delicious on a variety of different salads! This Greek dressing is amazing on a green salad with tomatoes, red or green onion, Kalamata olives, and a bit of feta and extra black pepper. Chick peas are an excellent addition too. The dressing is also fabulous on a pasta salad as well as on a classic cucumber, tomato and red onion salad.

The unusual ingredient that really makes this Greek dressing sing is using the vinegar/juice from a jar of pepperoncini peppers in place of regular wine vinegar. That vinegar/juice from the pepperoncini jar gives the dressing a unique taste. Briny, salty, slightly spicy. So flavorful!

This simple Greek dressing is so versatile that I try to always have it on hand in the fridge. Love it drizzled over shrimp gyros! Great on coucous with cucumbers, tomatoes, feta, red onion, and parsley for a quick Tabbouleh inspired salad. I also will occasionally add in a couple tablespoons of crumbled feta or finely grated Romano cheese to the dressing. This brings a little extra something when using it for a simple salad of tomato, chopped shallot, and mozzerella balls. Truly a flavor packed and versatile dressing!

Ingredients
  

Salad Ingredients

  • Iceburg and/or Romaine lettuce torn into bite sized pieces
  • 1 tomato seeded and chopped
  • ½ to 1 small red onion finely chopped
  • Kalamata olives amount to taste, chopped
  • ¼ cup feta cheese crumbled

Greek Dressing

  • ½ cup olive oil
  • ¼ cup vinegar/juice from a jar of pepperoncini peppers
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic minced; I use the premeasured frozen minced garlic cubes from Trader Joe's
  • ¼ teaspoon dried oregano
  • ¼-½ teaspoon kosher salt to taste
  • ½ teaspoon black pepper

Instructions
 

  • For the salad, place the lettuce, tomato, onion, and olives in a large bowl.
  • For the dressing, add all dressing ingredients to a mason jar or other jar with a tight fitting lid. Shake vigorously to combine. Drizzle over salad and top with crumbled feta and additional black pepper. Store leftover dressing in the refrigerator for up to a week. Enjoy!
