Ingredients

  • 4 Tablespoons butter
  • 1 Tablespoon olive oil
  • 1 shallot chopped fine, optional
  • 16 ounces white button mushrooms or baby bella brown mushrooms
  • 3 cloves garlic, minced I use 3 Trader Joe's Duroc brand frozen garlic cubes
  • 2 Tablespoons white wine
  • pinch red pepper flakes
  • 1 Tablespoon chopped fresh parsley plus more for serving
  • kosher salt and black pepper to taste

Instructions

  • Melt butter together with the olive oil in a skillet over medium heat. When butter is melted, add the mushrooms and saute for about 3-4 minutes. Add the shallot, if using, and saute another minute or two, until mushrooms are golden and shallot is softened.
  • Pour in the white wine and red pepper flakes, and let cook another couple of minutes, reducing the wine slightly. Now add in the garlic and the parsley along with a good pinch of salt and black pepper. Cook another minute and taste for seasonings.
  • To serve, sprinkle with some additional chopped parsley and enjoy!
