Strawberry Cheesecake Ice Cream Cake
This simple Strawberry Cheesecake Ice Cream Cake can be put together in minutes and is oh so yummy! My kind of warm weather dessert – easy and delicious! Starring ice cream sandwiches and strawberry cheesecake ice cream, it is sure to please everyone it is served to! There are a multitude of ways that you can modify this recipe to. Substitute a different flavor ice cream or ice cream sandwich. Change the chopped Tru Fru fruit to mini chocolate chips or chopped candy bars. The options are endless. What I love about it most is that it takes very little effort to get a party-worthy dessert! Whether that party is family, friends, or just me and a spoon!
I try to keep my freezer stocked with these yummy golden ice cream sandwiches, varying flavors of ice cream, and Cool Whip. Those are the main ingredients. The only other ingredient is plain or chocolate covered freeze dried fruit. I like to use the Tru Fru White Chocolate Covered Strawberries. Not the frozen ones but the ones you get in a bag that are in the snack aisle of your local grocery store. I use the freeze dried ones as they have a more concentrated strawberry flavor than the frozen ones. You could use the white or milk chocolate covered variety, the plain ones, or a combination! I use whatever I have in the pantry, which is usually the plain and the white chocolate ones. Coarsely chop them up and sprinkle in the middle layer and on top. They kind of rehydrate when in contact with the ice cream and Cool Whip and add such good flavor!

Strawberry Cheesecake Ice Cream Cake
Ingredients
- 1 half gallon package strawberry shortcake ice cream softened up a bit; I use Mayfield
- 1 package golden vanilla ice cream sandwiches can use regular or mini sized; I use Mayfield
- 1 package Tru Fru dried strawberries in cream chopped coarsely; can substitute milk chocolate if desired
- handful Tru Fru freeze dried strawberries crumbled
- 1 8 ounce container Cool Whip whipped topping thawed
Instructions
- Take a large foil loaf pan and inside it lay a piece of parchment paper, cut to fit the pan, with the sides left a bit longer. This will make it easy to get the cake out of the pan when ready to serve.
- On the bottom of the loaf pan place a single layer of ice cream sandwiches to cover. If using mini ones, you will need to cut a few lengthwise to fill up the entire bottom. Now pour the softened ice cream on top of the sandwiches and use a spatula to spread evenly.
- Sprinkle most of the chopped dried strawberries on top of the ice cream. Now add another layer of ice cream sandwiches on top of that. Cover all with a thick layer of Cool Whip and sprinkle with the remaining dried strawberries. Cover with plastic wrap. Place in freezer for 2-3 hours or overnight.
- When ready to serve, remove from foil pan, lifting out with the longer parchment paper ends. Place on a serving dish. Let sit out on the counter for about 5 minutes. Cut into slices and enjoy!
